No-Bake Peanut Butter Cookies

Mig just loves to "cook".  But during the summer time I'm not that inspired to fire up the oven.  So to fulfill Mig's culinary need to make something in the kitchen, I searched for some no-bake cookie recipes.   This is the one we settled on because we already had all the ingredients. 

 The recipe only made about 6 cookies so I figured if it was a bust at least it wouldn't be that much of a waste!  And it turned out that they weren't too bad (esp. if you like peanut butter!). I  probably won't be hearing too many requests for them to made again in our house because they were very thick and chewy ( so make sure you have a drink ready to follow-up with).  This was for sure an easy and fun recipe to do with the kids and Mig's favorite part of the whole thing was crushing the graham crackers!

And for the recipe:

8 graham cracker squares, finely ground 
1/4 cup raisins
1/4 cup smooth natural peanut butter
2 tablespoons plus 2 teaspoons honey
4 teaspoons sweetened coconut

Combine graham crackers, raisins, peanut butter and honey in a small bowl. Pat into 8 cookies and press lightly in coconut.  Enjoy!
